Gluten-Free Snack Review ~ Garden Lites Veggie Muffins @gardenlites

My youngest is now a month old and I have to confess that I'm still in survival mode.  I'm getting done what has to get done, but anything beyond that is not likely happening anytime soon.  Sadly the same is true for what's going in my body. Since I'm not the cook in the family I'm fortunate to have a hubby that comes home and makes a delicious dinner every night. During the day though I have to take care of myself.  Since I'm nursing what I consume is an even more important decision.   I need options for meals and snacks that are not only super convenient and quick, but also healthy choices.  


Garden Lites has recognized this need for healthier convenience foods and their latest product creation meets both needs plus offers a whole lot of taste.  Garden Lites Veggie Muffins are veggie-rich muffins you can find in the frozen food section.  These amazing snacks are gluten-free, vegetarian, high in fiber and low in calories.  Personally I love them because they taste great.


My family was sent one box of each of the five flavors available.  The flavors are Veggie Blueberry Oat, Zucchini Banana Chocolate Chip, Zucchini Chocolate, Carrot Berry and Golden Corn.  I have tried them all and have to say I really like them all.  My favorites though are the Zucchini Banana Chocolate Chip and the Veggie Blueberry Oat.  


I tried the Zucchini Banana Chocolate Chip veggie muffin first and it was love at first bite.  The muffin even smelled amazing after being heated and I loved the banana - chocolate flavor combination. 


I honestly can't decide what the best thing is about these muffins.  It might be how darn quick it is to have a tasty snack ready to eat.  The muffins come in a box of 4 and are individually packaged.  You can grab one straight out of the freezer without defrosting and it will be ready after only 35 seconds in the microwave!  You can also defrost them and just pop them in the microwave for a 10 second warm up.  


The muffins are very moist and full of flavor.  If you're a parent you'll love being able to give these to your kids for snacks.  You'll know they are getting some veggies and all they will know is that they taste great.  Even my picky eater son will eat a Zucchini Chocolate Veggie Muffin without hesitation.
