Recipe - Chuck Wagon Skillet

Chuck Wagon Skillet

This recipe was adapted from the Pillsbury One Dish Meals Cookbook.

1 lb. ground beef
1/2 c. chopped onion
1 tsp. cumin
1 tsp. garlic powder
1 tsp. chili powder
1 1/2 c. water
1 small zucchini sliced
1 c. frozen corn
1 15 oz. can stewed tomatoes, undrained
1 1/2 c. uncooked rice
1 c. shredded Cheddar cheese

Brown ground beef and onion in large skillet until beef is cooked and onions are clear.  Stir in seasonings, water, zucchini, corn and tomatoes.  Bring to a boil.  Stir in Rice.  Reduce heat to low.  Cover and simmer 5-7 minutes or until liquid is absorbed, stirring occasionally.  Remove skillet from heat.  Fluff mixture with fork and sprinkle with cheese.  Cover for a few minutes so the cheese melts.
