Taco Casserole
1 lb. ground beef
3/4 c. chopped onions
1 pkg. taco seasoning (or you can use 1/2 t. cumin & 1/2 t. chili powder)
3/4 c. water
1 can refried beans
1 8 oz. jar salsa
2 1/2 c. crushed tortilla chips
2 c. shredded Mexican blend cheese
optional - lettuce, tomatoes, sour cream
Heat over to 350 degrees. Cook ground beef and onions in medium skillet over medium-high heat until meat is throughly cooked. Drain. Stir in taco seasoning mix and water. Simmer 10 minutes. Combine refried beans and salsa in medium bowl. In an ungreased baking dish , layer 1/2 of the bean mixture, 1/2 the beef mixture, 2 c. tortilla chips and 1 c. cheese. Top with remaining bean & beef mixture. Bake at 350 for 25 minutes. Remove from oven. Top with remaining tortilla chips and cheese. Return to oven and back an additional 3-5 minutes until cheese is melted. Serve with lettuce, tomatoes and sour cream.
A yummy sounding simple meal for when time is limited and you still need to get dinner on the table!!
