Recipe - Rhubarb Dream Dessert

I got this recipe years ago from a co-worker.  It makes a nice alternative to a rhubarb crisp.  I absolutely love the crust, but when it's pretty much powdered sugar and butter what's not to love!  Can you tell we were anxious to dive our forks into it?

Rhubarb Dream Dessert

For the crust mix together:
3/4 c. margarine
1/2 c. powdered sugar
1 1/2 c. flour
3/4 tsp. baking powder
3/4 tsp. salt

Press into 9x13 pan and bake for 15 minutes at 350 degrees.  Cool.  Once it is cooled top with 4 cups chopped rhubarb.

For the topping:
2 T flour
1 1/2 c. sugar
2 eggs
1 tsp. vanilla
nutmeg to taste

Mix together flour and sugar then set aside.  Beat 2 eggs until light & fluffy.  Add flour mixture to eggs along with vanilla and nutmeg.  Pour over rhubarb and bake at 350 degrees for 45-50 minutes.

  6. The only food I've had Rhubarb in has been pie/ Butter and sugar and rhubarb--what could be better. Thanks for the alternative recipe.
