Recipe - Chicken Santa Fe Soup
1 large onion - chopped
1 large carrot - chopped
1 stalk celery - chopped
2 T. oil
2 cans chicken broth
1 box cooked wild rice
1 cooked chicken breast shredded
1/4 tsp. salt
1/4 tsp. pepper
1 can evaporated milk
Heat oil in 3 qt. sauce pan and saute onion, carrot and celery. Add 2 cans chicken broth. Add cooked wild rice. Then add cooked shredded chicken and bring to a boil until thickened. Add salt and pepper. Stir in evaporated milk. Heat through.
You can use fat free options for the chicken broth and evaporated milk to make a healthier version of this recipe.
