The Betty 10: Red Hot Summer Trends

I was checking out The Betty 10:  Red Hot Summer Trends to get some inspiration for planning this week's menu.  The first thing I eyed was these Mini Smores Hand Pies - crunchy graham crackers, melty chocolate, ooey-gooey marshmallows in a hand held pocket.

It doesn't really qualify for a main course, but it did remind me of one of my favorite meals for out camping - we simply call them Camper Pies.

Pizza camper pies are my favorite to make - pizza sauce, Italian sausage or pepperoni, green olives and enough cheese that it's gooey and yummy but doesn't explode.  Try making them on the grill.  You'll miss the smoky campfire smell, but not much else.
