1 med. onion chopped
1/2 tsp. cumin
1/2 tsp. chili powder
2 c. cooked rice
2 T. lime juice
1/2 c. chopped cilantro
8 tortillas
1 c. salsa verde
1 1/2 c. Mexican blend shredded cheese
Cook meat and onion in skillet until meat is fully cooked and onions are translucent. Add cumin, chili powder and 1/4 cup water. Simmer until water is reduced. In a seperate bowl mix rice, cilantro and lime juice together. Fill each tortilla with meat mixture and rice mixture. Place in 9x13 baking dish. Cover with salsa verde and top with cheese. Cook at 350 degrees for 20-30 minutes until cheese is a desired golden brown.
