1 lb. pork sausage (or bacon)
1 med. onion chopped
12 large eggs
1/3 c. sour cream
1 can diced tomatoes
2 c. cheddar or colby jack cheese
Cook sausage & onion. Drain. Beat eggs and sour cream in medium bowl with wire whisk. Add salt & pepper to taste. Pour into greased 13x9 baking dish. Bake at 400 degrees for 10 minutes until softly set. Reduce to 325. Spoon tomatoes over egg mixture. Top with sausage mixture. Sprinkle with cheese. Bake an additional 30 minutes.
