Recipe - Tomato & Spinach Pasta Toss



I love this meal.  It's really flavorful and looks so pretty served too.  You can feel good about eating this one.


Tomato & Spinach Pasta Toss

2 cups penne pasta

1/2 lb. Italian sausage
1 pkg. baby spinach leaves
1 can Italian style diced tomatoes (we also like Hy-Vee diced tomatoes with garlic & olive oil)
1 cup shredded mozzarella cheese
grated Parmesan

Cook pasta.  Crumble meat in large skillet.  Cook on medium-high until cooked through, stirring occasionally.  Drain.  Drain Pasta.  Toss pasta with meat.  Add tomatoes and cheese.  Toss again.  Toss with spinach when ready to serve and add grated Parmesan.

  2. these are ingredients I love and so does everyone else! I never thought of putting spinach with sausage, etc. I want to make this asap!!!
