Chuck Wagon Skillet
This recipe was adapted from the Pillsbury One Dish Meals Cookbook.
1 lb. ground beef
1/2 c. chopped onion
1 tsp. cumin
1 tsp. garlic powder
1 tsp. chili powder
1 1/2 c. water
1 small zucchini sliced
1 c. frozen corn
1 15 oz. can stewed tomatoes, undrained
1 1/2 c. uncooked rice
1 c. shredded Cheddar cheese
Brown ground beef and onion in large skillet until beef is cooked and onions are clear. Stir in seasonings, water, zucchini, corn and tomatoes. Bring to a boil. Stir in Rice. Reduce heat to low. Cover and simmer 5-7 minutes or until liquid is absorbed, stirring occasionally. Remove skillet from heat. Fluff mixture with fork and sprinkle with cheese. Cover for a few minutes so the cheese melts.
what size can of stewed tomatoes is called for here? This sounds really good and would love to make it this week. Thanks

ReplyDeleteLove the name of this recipe! I haave a lot of pain and read that cutting out tomatoes and other foods in the nightshade family would help reduce my pain. Is there a different ingredient you might recommend to substitute for the tomatoes in this recipe?
