Easy Summer Meals with Fast Fixin' and Giveaway

I quickly realized this summer that I rely a lot on Fast Fixin' products.  It's been a challenge having my son home for lunch again every day.  I know I've mentioned he is a very picky eater but he will eat pretty much any product Fast Fixin' makes, so I've been keeping my freezer stocked for quick and easy lunch ideas for him.  The thing is T. goes through spurts where he wants Popcorn Chicken Nuggets for three days in a row and then wants nothing to do with them the next week.  That's when I'm able to offer chicken fries, chicken strips, regular chicken nuggets and meatballs.  And one of those will usually do the trick.  By offering these options at home for lunch I haven't needed to take the kids out for fast food lunches at all yet this summer.  And by serving Fast Fixin' they are getting nuggets that are made with 20% lower total fat and calories than the leading brand.  And the nuggets they are eating are made from the best and healthiest part of the chicken, the white breast meat.

Fast Fixin' nuggets aren't only for lunch though.  We've made tasty dinners with them too including this quick & easy recipe that was featured on a package of Fast Fixin' Jumbo Popcorn Chicken.

Fiesta Chicken Salad

1/2 c. salsa
1/2 c. ranch dressing
8 c. mixed salad greens
2 chopped tomatoes
4 sliced green onions
1 can kidney beans, rinised & drained (we used black beans)
1 can Mexican-style corn, drained  (we used frozen corn)
2 c. shredded cheddar cheese (used a Mexican blend)

Combine salsa with ranch dressing.  Cover and chill until ready to serve.  Toss together or plate the rest of the ingredients.  Heat popcorn chicken according to directions.  Top salad with chicken nuggets and cheese and serve with dressing on the side.
