Salsa Chicken Fiesta
2/3 c. Bisquick mix
2 T water
1 egg
1 1/2 c. shredded cheddar cheese
3 chicken breasts cut in pieces
2 tsp. vegetable oil
1 1/4 c. salsa
Heat oven to 400 degrees. Grease 8x8 baking dish. Stir together Bisquick, water and egg. Spread in dish and sprinkle with cheese. Cook chicken in oil over high heat. Stir in salsa. Spoon over batter in dish within 1/2 inch of edges. Bake 22-25 minutes until edges are brown. Sprinkle with remaining cheese.
