Mexican Style Mini Meatloaves
1 lb. ground beef
1 egg
1 T. worcestershire sauce
1 c. quick oats
1 tsp. cumin
1 tsp. chili powder
salsa
1 c. mexican style cheese
Preheat oven to 350 degrees. Mix together ground beef, egg, worcestershire sauce, quick oats, cumin and chili powder. Press meat mixture into 12 medium muffin cups. Make an indentation in center of each and put 1 T. salsa in each. Cover each one with cheese. Bake for 30 minutes.

ReplyDeleteNow THIS is a recipe that I would really like to make for my father. He likes a good meatloaf, but to my knowledge this is quite different than anything he's ever had. I'm thinking that I'll try making these in six large muffin cups, and if there's any left over I could bake it in a mini loaf pan. Thank you so much for the recipe!
