Corn & Pepper Chowder
1 tsp. olive oil
1 c. chopped onion
1 c. diced sweet red pepper
2 1/2 T. flour
1/2 tsp. ground cumin
1/8 tsp. ground red pepper
1 can chicken broth
1 1/4 c. peeled, diced potato
2 c. frozen corn
1 can diced green chilies
1/2 c. evaporated milk
1/4 tsp. freshly-ground pepper
Saute onion and pepper 5 minutes or until tender. Stir in flour, cumin and ground red pepper. Cook 1 minute, stirring constantly. Gradually stir in chicken broth. Add potatoes. Bring to boil. Stir frequently. Cover, reduce heat and simmer until potatoes are tender and mixture is thickened. Add corn and remaining ingredients. Cook until heated through, stirring occasionally.
This one sounds good. I am due to make a corn chowder. Maybe next rainy day.
