Tomato-Tortellini Soup
2 cans chicken broth
1 9 oz. package refrigerated or frozen tortellini
4 oz. cream cheese spread with chive & onion
1 can condensed tomato soup
In a medium saucepan bring broth to a boil. Add tortellini and reduce heat. Simmer, uncovered for 5 minutes. In a bowl whisk 1/3 cup of the hot broth into the cream cheese spread until smooth. Return all to the saucepan along with tomato soup. Heat through. Optional - sprinkle with fresh chives when serving.
My kids love tomato soup but I think it is boring. This would be a great way for me to liven up tomato soup so everyone in the family can enjoy it.
